I really look forward to making my grab bag green smoothie, which is mostly green organic vegetables, 1-2 fruit options, coconut milk, ice, and a scoop of coconut cream. They’re refreshing, easy, quick, and extremely nourishing. Whichever vegetables I have in my fridge is what’s going in my smoothie! Since I get an abundant array of seasonal organic locally grown vegetables and fruits delivered to me from HelloHarvest, my mix is different every week, but what stays true is that it will be full of the freshest, organic and seasonal veggies and fruits. Every time it’s a little bit different, which is what I love about it! Even if it turns out a little too bitter, I just squeeze some extra lemon on there and that does the trick!
I will usually drink this for lunch if I know I’m going to have a bigger dinner, or vise versa. I limit my smoothies to 2 fruits and the rest vegetables. I’m really using this blend as an opportunity to eat as many dark leafy greens as I possibly can for the day, so make sure your smoothie is 75% green vegetables, and 25% fruit. Also, it is best if you purchase organic vegetables and fruits from your nearby farmer’s market, since most leafy greens and porous fruits like apples are very susceptible to surrounding pesticides!
The coconut cream in my smoothie will help keep you stay full and sustained throughout the day. It’ll also help to sweeten up the blend. Coconut cream has no many amazing benefits because it’s a good source of lauric acid. According to Diane Sanfillipo from Balanced Bites, coconut cream helps you defend against viruses, bacteria, and other pathogens and strengthens your immune system, protecting you from a wide range of diseases. Lauric acid is only found in a few foods like butterfat, coconut oil, and palm kernel oil.
