I hope that your day has been spooktacular and you’ve worked up an appetite because these jack-o-lantern bell peppers are to DIE for.
Not only are they quick and simple, they are full of nutrients that will leave you feeling full and satisfied.
Here’s how to make them:

Ingredients:
- Butter
- 1 large onion, chopped
- 2 pounds grass-fed ground beef
- Salt and pepper to taste.
- 2 ½ cups cauliflower rice (optional)
- 1 ½ cups marinara sauce
- 8 orange bell peppers
- ½ cup parmesan cheese
Instructions:
- Preheat oven to 400ºF.
- With butter, cook ground beef in skillet. In another skillet cook onions until brown. OPTIONAL: add cauliflower rice to onions. Mix onions and beef with 1 cup marinara sauce.
- Carve a jack-o-lantern face into peppers. Carve off tops and take out the seeds. Place on a baking dish.
- Stuff each pepper with the meat mixture and bake for 30 minutes at 400ºF.
- Remove from the oven and add marinara sauce and a dollop of cheese on top of each pepper.
- Broil for about 5 minutes.
- Remove & serve.
