Yes, it’s paleo! All natural organic, no sugar added deliciousness. These cookies are surprisingly moist, tasty, and festive! It didn’t take me much time to make these either.
ingredients
- 2½ cups blanched almond flour, sifted
- 2 tablespoons coconut flour
- 1½ teaspoon cinnamon
- ½ teaspoon ginger
- ½ teaspoon baking soda
- ½ teaspoon nutmeg
- ¼ teaspoon cardamom
- dash of sea salt
- ⅓ cup grade B maple syrup
- ½ cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- Option 1: additional pumpkin pie spice sprinkled over cookies when cooled (I recommend!)
- Option 2: add dark semi-sweet chocolate chips if you’re a chocolate lover! (also recommended!)
directions
- Preheat oven to 350 degrees F.
- In the bowl, combine the maple, pumpkin, egg, and vanilla.
- Slowly mix in the dry ingredients into the wet while you’re mixing.
- Mix all the ingredients together until smooth.
- Scoop ping-pong-ball size balls of dough onto a lined cookie sheet. Press down with your palm to flatten.
- Bake for 18-20 minutes at 350 degrees.
- While the cookies are cooking, make the icing by blending all of the ingredients in a blender. Leave at room temperature until you are ready to frost the cookies.

- 1 Tbsp Pure Vanilla Extract
- 1/2 cup organic maple syrup, Grade B
- 16 oz Cream Cheese, Full Fat
- 2 Tbsp ginger root, peeled and grated
