This is a super duper easy recipe that you could practically do in your sleep! Make sure you make enough for leftovers, so if you are cooking for two people then I would suggest doubling the recipe so you both have enough for lunch the next day.
PRE-HEAT OVEN: 425 F degrees
PREP TIME: 10 min
COOK TIME: 40-45 min, or until the internal temperature of the chicken reaches 165 degrees.
INGREDIENTS:
- 1 tbsp Ghee or Coconut Oil
- 6 Organic Boneless Chicken Thighs
- 2 Green Bell-pepper
- 2 Yellow Squash
- 1 tbsp minced garlic
- 1 tbsp extra virgin olive oil
- Spices: Salt, Pepper, Garlic, Paprika
DIRECTIONS:
- In an oven safe cast iron or stainless steel skillet, place the ghee or coconut oil, and place the dish over the stove.
- Turn the stove to medium heat, and let melt. Greece the pan with the melted oil or ghee.
- Add minced garlic throughout entire dish.
- Turn off the heat.
- Chop bell-pepper, squash and onion
- Place in the perimeter of dish.
- Place chicken on roasting dish.
- Sprinkle seasonings.
- Drizzle olive oil over the veggies.
- Cook, and enjoy!
