Cooking Paleo Dishes for the holidays is so fun! I often time surprise people with how healthy and tasty paleo dishes can be. Most people have the idea in their head that healthy=bland. That’s not the case at all! I made this for Thanksgiving and it was a hit. Bring this dish to your next holiday get together and you will prove them wrong 🙂
INGREDIENTS:
Serves 8-10 people
Whole Organic Brussels Sprouts (about 50 Brussels sprouts)
2 organic onions
Microwavable steamer (or any type of steamer)
Antibiotic free bacon slices (1 lb) – I bought my bacon from Wholefoods, which are made in the store and the butcher cuts fresh slices for you. It’s a little pricey but totally worth it. They don’t add antibiotics or hormones. It’s delicious and healthy
First I cut the ends off the Brussels sprouts, and then in half. I placed them in the microwavable steamer and let steam until they were slightly soft. I placed a large pan on the stove and cooked the anitbiotic free bacon. Keep the bacon in strips while cooking. This bacon is nice and thick so I can easily cut it into smaller pieces later.
Cut the bacon into small pieces and mix with the onions and the Brussels sprouts until brussels sprouts are golden.

BRUSSELS SPROUT FACT:
They contain good amounts of vitamin A, vitamin C, folic acid and dietary fiber. Moreover, they are believed to protect against colon cancer, because they contain sinigrin (wikipedia)
