These pumpkin squares are so easy and don’t require any heat! So on that busy Thanksgiving day when there’s no room in the oven, you can whip this up on the side and impress everyone!

makes 12 Squares
prep time ~ 10 minutes
cook time ~ 1-2 hours in the fridge
ingredients:
- 1 cup pumpkin puree (click for recipe)
- 1/3 cup coconut butter
- 1/4 cup coconut oil, melted
- 1 tsp pure vanilla extract
- 1/4 cup pure maple syrup (Grade B)
- 1 tsp pumpkin spice
- pinch of sea salt
- 1/2 cup chopped, roasted walnuts (click for recipe)
directions:
1. line an 8×8 pan with parchmant paper. Set aside.
2. Combine the pumpkin, coconut butter, coconut oil, vanilla, maple syrup, pumpkin pie spice, and sea salt in a food processor and puree until smooth.
3. Pour the mixture into the prepared pan. Sprinkle the roasted walnuts evenly over the top. Place the pan in the refrigerator 1 hour, or until firm.
4. Slice into squares and serve! Store in the refrigerator for up to 10 days.
