Salmon Egg Spinach Bake

I LOVE this recipe! It’s so tasty, filling, and very nutritious. I make a large batch of this, and then save it for the rest of the week. It’s the best way to eat healthy when you have a busy life. 
 
 It’s super easy to make, really tasty, a great source of protein and omega 3 fats, and low in carbs. And of course it’s soy free, grain free, and gluten free. Below I also included the cooking tools I used, but you can use whatever you have. These are the tools that I have found to work best for me. Enjoy! 
 
 

Breakfast Salmon Egg Bake Recipe

Total Time: 55 minutes
Serves: 4-6 (or 5-6 days if you’re just cooking for yourself.

Cooking Tools:

Ingredients:

  • 2 tbsp ghee
  • 1 medium onion, thinly sliced crosswise
  • 9 large eggs (pasture raised)
  • Sea Salt and black pepper to taste
  • 1 tsp nutmeg
  • 1 tsp freshly chopped dill 
  • 6 oz. smoked wild caught Alaskan Salmon, skin removed and roughly broken into 1/2-inch pieces. (I purchase mine from Vital Choice) 
  • Organic Spinach

DIRECTIONS:

  1. Preheat oven to 350 degrees F
  2. Melt the ghee in a 10-inch sauté pan over medium-high heat. Add the onion and cook, stirring occasionally, until soft and turning translucent, about 3 minutes. 
  3. Spread salmon pieces over onion mixture, and leave everything in the same skillet.
  4. Make sure the skillet is well greased with ghee before adding the rest of the contents. 
  5. Beat the eggs in a medium bowl, 1/4 tsp. salt, 1/4 tsp. pepper, and the nutmeg, and dill.
  6. Pour egg mixture over onion mixture, or if you’re skillet is not oven safe, then transfer everything to a baking dish, and grease the baking dish with melted ghee. 
  7. Put the skillet in the oven and bake for 30 minutes. 
  8. Take out the skillet, add a layer of spinach on top, and bake for another 5-7 minutes, or until cooked. 
  9. Enjoy 🙂
